Amarillo
New Orleans . . . New for this
summer is Melinda's Amarillo, a mustard-based Habanero sauce.
Made along the lines of traditional Barbadian West-Indies style
sauce, Melinda's adds its special touches to leave the competition
guessing again. "No one makes sauces with flavors as true
as ours," says company president, Greg Figueroa. "We
tested the leading brands in this category and found them all
inconsistent. Some were too salty and others lacked a real mustard
taste. Mustard is an American culinary icon. How could one eat
a hot dog, hamburger or a pastrami on rye without the yellow condiment.
We started with the mustard flavor, made it our goal not to stray
from it and incorporated the peppers and spices judiciously with
regard for our painstaking pursuit of balancing heat and flavor."
Oh, by the way, Amarillo is 'yellow' in Spanish.
