Turkey Frittata
Ingredients:
8 eggs
1/4 cup all purpose flour
1/2 tsp. baking powder
1/4 lb. canned green chilies, diced (wear rubber gloves)
1 cup lowfat cottage cheese
1/2 lb. Monterey Jack cheese, shredded
1-1/2 lbs. cooked turkey, cut into 3/4 inch slices
1 cup Melinda's Mild
Salsa
1/2 cup sour cream
Directions:
Preheat oven to 375°F. Whisk eggs in a mixing bowl until thoroughly
blended. Add flour, baking powder and salt to taste and mix thoroughly.
Stir in next 4 ingredients, mixing thoroughly. Transfer to a buttered
9 inch baking dish. Bake 30-35 minutes or until center is just
set. Let stand 5 minutes before cutting into squares. Serve frittata
with salsa and a dollop of sour cream.
